A dreamlike hotel with sea view is of course something “special”, in addition a gourmet restaurant Es Fum a dream – and unfortunately also often a “rarity”. During my stay at the St. Regis Mardavall, according to the description, both should be possible. The Spanish Michelin chef Rafael Sanchez spoils in the gourmet restaurant “Es Fum” the guests of the hotel and many culinary friends from Mallorca and on this evening – also me 🙂
Restaurant Es Fum – Restaurant with sea view
For me personally, in addition to an appealing menu in the restaurant, a very good service, the view is also crucial. While I was pampered by Paul Schrott and the view of Lake Wörthersee in the SchlossStern restaurant in Velden, this view should beat almost everything.
A friendly welcome and the option to dine in the restaurant or on the adjacent terrace, a view of the Mediterranean Sea, the St. Regis Hotel pools empty in the evening and the adjacent bay. At that moment, you really don’t have to think twice about dining in the restaurant or on the terrace with that view. The decision was clear – even if it was only temperatures of 16-18°C in the evening after sunset, this view – simply priceless.
Menu – 6-course, 8-course, 10-course at Es Fum
Rafael Sanchez and his team offered different options for the evening with 6-, 8- or 10-course menus and also actively showed the option to change the different courses if desired. Actively also asking if there are allergies or similar problems and if something should be taken care of. Perfect! (especially if you are highly allergic to all dishes with apples or kiwis).
All the dishes and courses sounded perfect, but I opted for the 6-course menu – an “asparagus journey” for the evening and I was really excited to see how it would be executed.
Asparagus Journey “Open Air” – Es Fum Restaurant
The ideas for an “asparagus journey” were already very difficult to describe, each course framed by a stalk of asparagus, sometimes white asparagus, sometimes green asparagus. The solution to the problem was simple – wait and start enjoying the evening and let myself be spoiled by the exemplary team.
The selected 6-courses of my personal asparagus journey were:
- Cantaloup melon tartare with grilled green asparagus, goat cheese and mint reduction.
- Lobster mosaic with sea asparagus and molusks
- Loup de mer fillet with gratinated white asparagus, asparagus-cardamom sauce
- Asparagus sorbet with cotton candy
- Bresse guinea fowl with polenta asparagus cookie, red cabbage and black beer jus
- (selection of international cheeses)
- White and green asparagus timbal, cherry-quince
It’s really hard to say which course of the evening was my personal favorite, as they were just perfectly matched and each course was a perfect taste experience.
CONCLUSION – Restaurant Es Fum by Rafael Sanchez – St. Regis Mardavall
The evening at Es Fum Restaurant was absolutely successful, starting with a friendly welcome, a gorgeous table and a breathtaking view. Of course, what is even more important in a restaurant is the taste, the matching of the different courses and also the right timing.
The staff in the restaurant Es Fum under the direction of Michelin star chef Rafael Sanchez succeeded wonderfully in making the evening a highlight and one of the most beautiful culinary experiences of recent months.
I have often received the question in recent days whether I could recommend restaurant Es Fum and how I would find the compositions of Rafael Sanchez and his team and I can say, I personally like the style very much and the different ingredients are perfectly matched. The restaurant staff also contributed greatly to the overall impression.
I will certainly choose the restaurant again during my next stay at the St. Regis Mardavall Mallorca and can unreservedly recommend it to you, whether as a hotel guest or even as a vacationer in Mallorca… Many thanks to the staff for a lovely evening at “Es Fum” at the St. Regis Mardavall Hotel.
I will spend my next evenings at the Castillo and will also dine there on a beautiful terrace before heading to the golf course for delicious tapas.
The restaurant Es Fum restaurant in Mallorca is definitely one of the best addresses on the island and is an absolute recommendation.
